Turkey Stock from Your Leftover Turkey

Here’s how to make turkey stock from your leftover turkey.

First, remove any turkey meat from the turkey, and reserve for use later.

Place the turkey carcass in a stock pot large enough for it to fit in. If necessary, break up the carcass to fit. Cover with water and bring to a boil.

Once you’ve got a full rolling boil, reduce to simmer and simmer until it’s broken down into smaller pieces. The water and heat will do this with only occasional stirrings.

Continue to simmer for at least one hour and stir occasionally. The stock will take on more flavor the longer you simmer it.

Strain through a colander to remove the turkey pieces, and return to the stock pot to reduce. Bring to a boil and reduce stock until you have the flavor you desire, whether mild, or much stronger. The longer you reduce it, the stronger it is.
