Fajitas Go deliciously with the Gourmet Guacamole.
You will need:
3 Boneless skinless chicken breasts
1 tsp chili powder
1/2 tsp garlic
1 tsp cumin powder
1 tsp salt
2 Bell Peppers (I prefer red)
2-3 other peppers, I like using anaheim, but you can use whatever you like.
1 Large white onion
Mix salt, chili powder, cumin, and garlic together and rub all over the chicken breasts. Let sit for 30-60 minutes. If you can do the rub the night before and refrigerate, it even better.
Peel and slice onion in large sections. I section mine in 3-4 pieces. Put on the grill.
Add chicken and peppers to the grill. Peppers can go on whole.
Cook chicken on both sides and cook thoroughly until completely cooked. Roast the peppers until they are seared on all sides. Grill the onions until they have a clear-ish appearance.
Toss chicken, peppers, and onion together. Serve on tortillas with cheese and sour cream.
