Christmas Morning Beignets

1 cup milk
1 egg
1 pkg yeast
2 Tbs butter
2 Tbs brown sugar
3 cups flour
1/4 tsp salt

And the special flavor…Orange rind, about a tbsp. It’s optional, though.

After scalding milk, add butter and sugar. Cool it off till it’s lukewarm. Add yeast and dissolve. Add salt, orange rind, and about half the flour. Beat well.  Add egg and beat well, add the remaining flour and beat again. Cover and let rise in a warm place until it doubles in bulk.

Knead gently and roll out on well floured board to about 1/4 inch thickness. Cut into rounds, cover again and let rise for about 30 minutes. Cook in deep fat. Drain and sprinkle with powered sugar or pour doughnut glaze over them. I use the doughnut glaze because that’s my personal preference.

  1. Oh wow. Rarely do I look at recipes and think “now THAT’s what I want for breakfast.” But today I’m cooking in an industrial kitchen with a deep-fryer! True inspiration! One question: what kind of fat do you deep-fry in? Peanut oil? Lard? Vegetable oil?
